I love these muffins for breakfast, the zesty kick of the berries being a refreshing wake up call, with berries being hailed as a new superfood packed with antioxidants.
Follow the recipe for sweet muffins and when you have almost folded the ingredients together add an handful of frozen mixed berries*. Spoon into the muffin cases, sprinkle with oats or seeds and bake. Because the berries are frozen the cooking time will be about 5 minutes longer. The cooked berries will be sticky and the cooked muffins will need easing out of the cases.
*Frozen berries are one of my store cupboard – or in this case freezer – essentials. Useful for adding to cereal, porridge, muffins and smoothies.
