[...] The idea is that the orange ‘infuses’ the pudding with flavour. This is not a wholly original idea though, there is a classic British pudding called the Sussex Pond Pudding which is a lemon suet pudding out of which flows a buttery syrup sauce once it’s cut open – making a pond. The lemon, is actually inside the pudding and here we see the similarities (albeit slightly tenuous) between this and Blumenthal’s Hidden Orange pud. ( Find an excellent Sussex Pond Pudding Recipe here http://fussfreeflavours.com/2007/10/sussex-pond-pudding/). [...]

I have often seen recipes for this pudding in books and wondered about it. I am so glad to hear from someone who has actually made it though I'm sorry that you were not that impressed with the results. It certainly looks impressive and I bet that syrupy lemony sauce was delicious.

Hi Carolyn,

Jane Grigson says to cut the still "vigorous" lemon up and serve it, I pressed the remainder of the juice out of it and discarded it.

I must make a savoury suet pudding next.

This is soemthing I have never heard of - so what happens to the lemon, do you just discard it?

I am a bit of a sucker for suet puds, especially spotted dog (or dick)
