Do mean the kind that come wrapped in plastic and seem to have a bit of liquid around them? I've wanted to roast beets for so long but haven't had the courage (fear of staining everything purple-red and not knowing how) and there not seeming to be many beets around (apart from the previously mentionned cooked variety).
