Bake #8: Grasmere Gingerbread – The Great British Bake Off Cookbook Challenge

Bake the 8th of the Great British Bake Off Cookbook Challenge.

These were really rather good, a cross between a flapjack and shortbread, crunchy and chewy.   My instincts told me to add more ginger when making them but I stuck to the recipe.     Next time I will go with what I think and will put that extra ginger in.

Definitely one to repeat.

    It’s a classic NZ recipe, sooooo good. Although your gingerbread might be a good base for the Edmonds gingery topping. Hmm.

  3. Is this the stuff that comes wrapped in wax paper with the blue and white pattern on it? I am CRAZY about this stuff. Never occurred to me to seek out a recipe for it.
