    My favourite has got to be Salmon.

    I love Cajun Blackened Fish: use any white fish fillet although catfish or Coley is my favourite, cover with cajun spices ( a premixed one is fine, or experiment with your own) and blacken in a heavy frying pan. Serve with rice and beans, crisp salad, and a drizzle of sour cream. YUM!

    I love to make steamed salmon with pak choi, shitake mushrooms, ginger, garlic, chilli, oyster sauce, soy sauce and sticky japanese rice.

  12. Hubby does the cooking and my favourite is what is called a Cod Rarebit, lovely combination of fish, onion, tomatoes, potatoes, Crème fraîche and cheese. So refreshing.

    I absolutely love Moqueca. I generally eat it with shellfish but it can be cooked with any fish. It’s real delicious.
