We love meringues in general, and pavlovas in particular. There is nothing like a meringue for its crispy, delicate crust hiding the soft, sticky and slightly gooey centre. And while there’s nothing like a proper pav, with lashings of cream and heaps of lovely, fresh, ripe fruit. It must be said, however, that like many decent puddings, it’s something best enjoyed in moderation.
