To celebrate 130 years of making excellent salt Maldon has produced this lovely book packed with recipes by the world’s top chefs, all using Maldon Salt.

To get you in the mood here is William Curley making a dark chocolate entremet with a Maldon sea salt caramel.   If you break the recipe down it is not quite as complicated as it first looks, and you can cheat and use shop ice cream!

    Desert Island dish? It would depend what I could forage and what i had with me when I was stranded. I’d hope to have a bag of lentils then I could make dhal and add whatever I could find in the way of wild herbs, veg and fish.

    Hmm, as for my Desert Island Dish, I think it would have to be a salted caramel and evap rice pudding that my mum makes, not sure if there’s a similar recipe in the book or whether it’s as good as my mum’s though!

    Mmm the images being on a desert island conjures up~ peace in paradise :) My Desert Island Dish would be Snapper fish seasoned with salt leftover from sun evaporated sea water and flavoured with freshly fallen coconut all washed down with fermented pineapple juice ;)

    For my desert island dish I would find all the ingredients available on my desert island and see what I could come up with ! I am guessing – prawn and seaweed and and maybe some sort of coconut and banana dish ! Of course if you mean desert island as in favourite – any sort of risotto and Banoffee Pie for pudding – mmm !

    My Desert Island Dish would be a spice mix of (Maldon) sea salt, dried seeweed, dried chillies and any other herbs I could find on the island. With this any fish or fruit would taste great!!

    Well I presume the weather will be nice on my desert island so I’d go for ice cream. Love pistachio flavour so I’d choose that.
