#ExtraVeg April 2014 – A Simple Way to a Healthier Diet

Extra Veg BadgeYesterday the headlines were calling for your 5 a day of fruit and vegetables to be increased to 7 or even 10 a day, with some studies showing vegetables are up to 4 times healthier than fruit.

My one simple philosophy for healthy eating, seems more appropriate than ever:-

Forget diets and eat a generous portion of (raw) vegetables with every meal whenever you can.

By eating #ExtraVeg you not only eat more of the good stuff, but by default eat less of the bad stuff.  Simplez!

Michelle and I would love to see your ideas for how you eat #ExtraVeg – I try for a least two portions with my breakfast – my usual green smoothie contains two large handfuls of leafy greens, and today I had a breakfast salad containing a handful of spinach, cupful of roasted butternut squash and a chopped banana topped with seeds.  That is 2 and 3 portions and you have barely started the day.

This month I’d especially love to challenge you to add vegetables to a meal where you would not usually eat them – so maybe breakfast or a mid morning snack, or try a vegetable you have not eaten before?

  1. Good luck with your challenge! I’m quite good with my fruit and veg most days and reach my five, but seven or ten seems like a real chore. Love the idea of adding raw veg at every meal, might give that a try – although not sure carrots would work on my shredded wheat :)

    • Not sure about carrots and shredded wheat, but certainly a grated carrot in porridge or muesli would work well and it is a nautral sweetener.

  2. Do pulses count? I have been eating more pulses lately.

  3. I’ve added it to the diary Helen :)

  4. Yay, this will fit right in with my Slow Cooker Challenge theme of 7-a-day!

  5. I hope to add some recipes this month! Extra veggies are always great boost of vitamins ;)

  6. I love this challenge as i’m always trying to work extra portions of veg into the boys’ diets. They are not natural fruit eaters, but do love their veggies. I’ve been trying to build up to 7 a day, and am quite enjoying it.

  7. This is a great challenge. I love dishes that are packed full of vegetables.

  8. Love veg, and don’t even think about it……soups in the winter, salads in the summer, poached egg with poached tomato for breakfast, vegetables with every meal……ps have submitted photo but the site posted before I’d cropped, so if I could post it again….it would look a whole lot better!

  9. Nice event Helen. Just submitted Microwave Vegetable Makhani Curry. Will be coming back to see all the entries. :)

  10. Bookmarked – will try and enter this month! I’ve been eating extra cake, need to rectify that with extra veg!!!!
