This is one of my favourite weekend breakfasts and perfect to take back to bed with coffee, the question is who pops out to buy the papers whilst the chef is at work? This recipe was one of my submissions for UKTV’s The Peoples’ Cookbook. Ingredients 3oz pancetta 3oz strong cheddar Savoury muffin batter Dice [...] [...] I love these muffins for breakfast, the zesty kick of the berries being a refreshing wake up call, with berries being hailed as a new superfood packed with antioxidants. Follow the recipe for sweet muffins and when you have almost folded the ingredients together add an handful of frozen mixed berries*. Spoon into the muffin [...] [...] Make as per the savoury muffin mix but use a mixture of half fine cornmeal and half flour in place of the flour, and a mix of milk and yoghurt in place of the milk. I added a handful of sweetcorn and sprinkled the batter with pumpkin seeds before baking to add some texture.
