It sometimes seems to me that in a world where we are increasingly obsessed with cookery programmes there are also more and more ready meals for sale in the supermarkets. Ironically our appetite for watching others cook does not also extend to getting into the kitchen and rolling our sleeves up.
Eggs are a popular, versatile and consequently very useful item to have in stock, we always keep a box of free range eggs in, and a quick weekday lunch or supper will often consist of egg fried rice, or a poached egg on toast. Of course eggs come into their own for baking and we use them in pancakes for weekend breakfasts.
It is possible that after pancake day you have some spare eggs and Chef Dean Edwards has created a collection of eight main meals using egg, featuring tortillas (full English breakfast), omelettes, kedgeree and a delicious sounding fragrant Indonesian fried rice.
