This month Dom challenged us to grab the pile of recipes ripped out from magazines and choose one to cook for Random Recipes.
My chosen recipe was Anna Hansen’s Ginger Crunch, which has been sitting on my bedside table since June when I ripped it out of the Telegraph Magazine. (I have a vague inkling that my Mother may have ripped it out and sent it to me).
E’s mother came for tea today, I wanted to bake something, so it was perfect timing for the ginger crunch. The recipe specifies using an 11 x 34cm tin, not having one, I used 80% of the ingredients and my 2lb loaf tin which worked a treat. These are really really good, buttery with a soft buttery ginger icing. I think that a lemon version would also work well.
