These beautiful little honey orange madeleines are astonishingly easy to make and will always impress. This version is dairy free.
Honey orange madeleines are best enjoyed within minutes of being taken out of the oven. Happily homemade madeleines are very easy to make and are so much nicer than shop or bakery bought ones will be by the time you have taken them home.
I’ve flavoured these with honey and orange and have used Pure sunflower spread which is dairy free and works so well in these fluffy cakes.
Recipe: Dairy Free Honey & Orange Madeleines
Ingredients
- 75 g Pure Dairy Free Sunflower Spread – melted and cooled
- 2 Large Eggs
- 90 g Granulated Sugar
- 2 tsp honey
- 100 g Plain Flour
- ½ Tsp Baking Powder
- Zest of one orange - finely grated
- Pinch of salt
Instructions
- Weigh the Pure spread into a saucepan and gently heat until melted. Remove the pan from the hob and allow to cool, but not solidify.
- Whisk the eggs and sugar together until they have doubled in size and are light and fluffy, add the honey and whisk again. Slowly fold in the flour, baking powder, orange zest and salt and salt.
- Slowly pour in the melted Pure spread, gently folding all the time until you have a foamy batter that is full of air. When mixed cover the bowl and put in the fridge for at least an hour to chill.
- Melt a little more Pure spread and brush it onto a Madeleine pan, allow to cool and then dust with flour.
- Heat the oven to 190C/ GM 5. Use a spoon to fill the Madeleine pan with the batter so each well is about 2/3 full and bake for 7 - 9 minutes until until risen, golden and shrinking away from the edges of the pan.
- Leave for a few minutes and then turn out. Dust with a little icing sugar to serve.
- The Madeleines are best enjoyed when still warm and crisp on the outside. They can be stored for a day but will lose that just cooked crisp outside.
Notes
- The batter will keep for up to two days in the fridge.

Madeleines just coming from the oven… you’re right, they are so delicious… and so much better than the ones you can buy in the shops. Honey and orange seem to be a very nice combination as well. Thank you for sharing this recipe and these amazing pictures as well!
Helen
I love fresh madeleines, and they are so easy as the batter keeps for a while in the fridge too.
Emily @amummytoo

I’m loving this recipe Helen. I’m trying to reduce amount of milk we consume so this is just perfect, and orange is one of my favourite flavours as well.
Helen
Thanks Margot. I am very impressed with the Pure for baking.

Oh Helen, those look glorious! Don’t know why I never bake madeleines as I adore them and they are so easy… Love the idea of an orange-flavoured madeleine!
Helen
I like them for weekend breakfasts, so easy to make once you have made the batter that will sit in the fridge for a few days.
Nazima
I’ve cooked with Pure before when baking for a dairy free friend so I know it gives a great texture in cakes. These look very tasty! not made Madeleines before – must go get an appropriate baking tray (though also wanting to try out baked doughnuts so will have to prioritise – waistline cannot allow both ;)
Helen
Like many bakes I think they are better in an electric oven, I have yet to master perfect madeleine humps.
Diana
These cookies are so pretty! They look delicious too I love the combination of honey and orange.
Helen
I am sure you could make them in a mini muffin tin, but I do so adore the shell shape!
Peter @ Feed Your Soul Too

Fresh madeleines are so scrumptious. Can I freeze the batter somehow?
Helen
I have never tried. I think I’d freeze dollops on a silicon mat and then let them defrost on the pan. One to try.
Rachel Anderson
So much more interesting than another biscuit. Looks lovely!
Helen
Thanks Rachel, really very easy too!
Sarah, Maison Cupcake
You know I’ve still not made madeleines again since the book shoot. No idea why because they’re wonderfully easy.
Helen
I do not make them that often, but should as I really do love them.
Cassie
Freshly made Madeleines are delicious. With a touch of orange and honey, these sound wonderful.
Bethany Clegg
My Mother bought we some lovely trays for making Madeleines, and they are now my favourite cake of choice. Only problem I have is they get eaten in no time, which is probably the best way.
Debs
This is a great recipe, delicious and easy to make. A bonus that it is vegan too.
Michael B
I never buy supermarket madeleines, they just aren’t right. Homemade is always the way to go.
