Recipe: Greener Colada – Pineapple, Coconut & Spinach Smoothie

Greener Colada Smoothie - Pineapple, Coconut and Spinach captioned

A week in France shortly followed by a week in Washington DC, was bliss, but has led to a certain amount of weight gain.   I am lucky that I shed holiday pounds fairly easily – a week or so of being sensible usually does the trick.   Eating large amounts of vegetables, some fruit and cutting down on starchy carbs seems to work for me, giving a much needed vitamin boost and does not leave me hungry.

I also really really missed my Vitamix and my daily green smoothie for breakfast and had plenty of time when away to think about the drinks I wanted to make.   My first breakfast home is my take on the Piña Colada – the Greener Colada – served in my new American cream bottle, complete with a stripy straw, for a food blogger prop shopping is a must when on holiday!

Recipe: Greener Colada – Pineapple, Coconut & Spinach Smoothie

Serves 2

2 small bananas
1 large handful frozen green grapes
1/3 small pineapple – peeled and cut into chunks
1 dsp Coconut Oil*
1 dsp ground flax seeds (linseed)
1/2 glass water
1 large handful spinach (or kale if you are feeling hardcore)

Place all the ingredients into a high performance blender and whizz until smooth.  Add more water if needed.

* Or use coconut water and leave the water out.

Seeds for Cereal and Coconut Oil

I used these delicious ready ground Seeds for Cereal from Virginia Harvest, they are very useful and save you grinding your own seeds. and The Groovy Food Company Coconut oil which I reviewed earlier in the year, and have been buying ever since as I think it is a fab product.

With thanks to Vitamix for my machine, Virginia Harvest for the seeds they gave me at the Natural Products Show & Scarlet Willow for the pretty pineapple napkin.

With so many holidays I have not taken part in that many blog events recently so I am delighted that this fits several.

Firstly Jac and Lisa’s No Croutons Required where the theme is smoothies.

Secondly, Breakfast Cub, hosted by Elizabeth this month with a theme of high fibre – as opposed to a juice a smoothie uses whole fruit and vegetables so they are brimming with fibre

OOh this sounds right up my street, alas, I don’t have a high powered blender, just a 25 year old juicer! Love the colour of the smoothie and the props too. :) Thanks for entering your recipe into the Breakfast Club!

I like the look of this, if I can overcome my horror of spinach :). Seriously, though, it seems like a great recipe and I an sure it tastes wonderful!

Well I tried this for lunch and both my husband and I enjoyed it but next time, and there will be a next time, I will use less banana. I used two handfuls of spinach and chia seeds because my flax seeds were hiding somewhere. I also used fresh grapes rather than frozen and frozen pineapple instead of fresh. Thank you.
