I have written many times before about my one simple mantra for healthy eating – and at this time of year, with the dark late afternoons, falling leaves, dampness and general coldness it is really easy to comfort eat and forget about the basics.
My usual breakfast is a vegetable packed green smoothie, which gets me well on my way to my 5-a-day, for extra bulk I often add a heaped spoon of porridge oats, and come the winter I exchange my smoothie for porridge.
An added benefit of oats is that they contain soluble fibre in the form of beta glucan, in their diets which has been linked to lowering cholesterol. Quaker Oats are running a #FeelingFibrant campaign aiming to get people creative in the kitchen by boosting their fibre intake and creating some oat based recipes. Fibre is an important part of your diet, generally intakes are low in the UK, a good way to reach the 30g of fibre recommended by SACN is to eat a portion of oats every day.
Guidelines from the US also recommend that we eat more wholegrains, aiming for 3 x 16g portions. Quaker oats are 100% wholegrain and a good source of fibre, as well as being delicious and adaptable.
Quaker Oat So Simple was a staple in the days that I had an office job, I kept a box in my desk and could quickly make porridge in the work microwave, simply pour the oats into a microwaveable bowl, use the sachet to measure the milk, mix, cook for two minutes and bingo! Breakfast is served.
Nowadays I make my breakfast at home, and porridge can have endless variations. In a carrot cake inspired twist, I’ve added grated carrot and apple to the oats, as well as some comforting warming spices, then cooked in the microwave for two minutes. Oat So Simple indeed!
Recipe: Spiced Carrot & Apple Porridge
Ingredients
- 55 g porridge oats or 2 sachets Oat So Simple
- 1 small carrot - peeled and finely grated
- 1 small apple - cored and finely grated
- 1/2 tsp vanilla extract
- 1/2 tsp ground mixed spice
- 2 cardamom pods - lightly crushed
- 330 ml milk - I use coconut milk drink - but pick your favourite
To serve
- berries
- maple syrup
- ground cinnamon
Instructions
- Please the oats, apple, carrots, spices and milk in a microwavable bowl and cook well.
- Microwave on full power* for 2 minutes. Stir, cook a little longer if needed.
- Divide between two bowls and garnish with berries, syrup and a pinch of cinnamon to taste.

I use oats in healthy pancakes! I mix oats with egg whites, whey protein, milk and mashed banana and fry them in a little coconut oil. They taste great and are totally guilt free, if topped with healthy fruit and not lots of Nutella of course!

I use oats to make healthy waffle cookies
Ingredients: 1 small ripe banana, 1 egg, ¾-1 cup oats, 2 packets stevia (optional), 2 tablespoons raisins or chocolate chips (optional), pinch cinnamon (optional)
Method:
Heat Waffle iron to medium heat.
Place all ingredients (except raisins or chocolate chips) into a mini blender.
Coat the iron with coconut oil cooking spray.
Spoon batter onto iron.
Cook for 3-4 minutes, or until cooked through.

I make what I call Cheesy chilli and garlic oatburgers by mixing grated cheese, crushed garlic and chopped chilli with porridge oats and a beaten egg. Mould into “burgers”, coat with more oats if needed and barbeque or fry. Made them originally for visiting vegetarians but everyone seems to like them

Cook the oats in milk till thick and stir in chopped or dry fruit. Cool and set over night in the fridge. Cut into thick firm slices or blocks in the morning and fry in a little oil till golden and crispy on the outside and warm and soft inside.

6oz butter
4oz sugar (either granulated or soft brown)
2oz cornflour
2oz porridge oats
2oz plain flour
1 tablespoon milk
half teaspoon salt
Cream together butter and sugar, then mix in the milk. In a separate bowl, mix together everything else.
Combine the contents of both bowls in one and mix well, then roll out the resulting mix on a floured working surface until it’s about 6mil thick or whatever thickness you like your biscuits.
Cut into your desired shape and size and carefully place on a buttered and floured tray – rub a bit of butter on a tray then shake a little flour on it – bake at 180c for about 10-15 minutes or until a light brown colour.
Carefully remove from tray and put on a wire rack until cool – be careful because they will very easily break while still hot or warm

I’ve experimented with a baked porridge type idea too. Combine oats, milk, a ltitle sugar, a hint of cinnamon, grate in some apple and chuck in some frozen blueberries. Instead of digestives, you can use oats for the base when making cheesecake. Not very original perhaps, but effective! Once baked, the oat base can be quite sweet, so if you don’t have a very sweet tooth, a fruity cheesecake might be a better option (blueberry? Mmm!)

Hi, some lovely ideas here.In the winter months I encourage my young daughter to have oatmeal porridge before school. I use oats and glitter for Reindeer Food – with the children’s (or grandchildren’s) help, mix oats and glitter together in a jar and shake well. Then go outside on Christmas Eve and sprinkle them across the lawn. Santa’s reindeer will see the glitter sparkling in the moonlight as they cross the sky and they will be tempted by the oats and definitely come down to your house. While they are eating the oats, Santa will deliver the presents. In the morning you might see a bit of glitter on the lawn but you will never find any oats!!!

I use oats in my cheesecake bases. To do this, I mix flour, oats, baking powder, sugar and butter until I get a crumbly texture.
