Imagine a rich, buttery, velvety smooth chocolate mousse; one so rich that an espresso cup full is more than enough. Now imagine that the little fat in this mousse is primarily monounsaturated (thus good) and the entire pudding is cholesterol free. Now imagine that this pudding also contains no refined sugars and takes less than 5 minutes to prepare.
Created using Clearspring’s new organic silken tofu which when whizzed up is deliciously creamy, this was partially inspired by Jac and by an avocado chocolate mousse that can be found all over the internet. I need you to trust me here, the finished product does not taste of either avocado or banana although on the surface they do seem to be odd ingredients.
This is probably more of a chocolate pot than a traditional mousse, without raw eggs it is safe for small children to eat, and there is no worry about the mousse separating in the fridge.

I’m loving this idea- may have to make tomorrow but think I will melt G%Black choc as that’s in the cupboard instead of cocoa.

It is really rather good Erica. I was wondering about doing a hot sauce with melted choc and whizzed tofu. The Clearspring tofu is delicious as it is from the packet too with a drizzle of soy sauce.

This sounds well worth trying. Weirdly, I just read about brownies using avocado. I guess using agave syrup and raw cocoa powder would make this even healthier. Now, where do I get silken tofu from …. hummmm!
Helen
Apparently some agave is very processed maybe try honey? I would have done but the recipe had to be vegan to send to Clearspring.

wow what a surprising list of ingredients! It looks stunning in the little espresso cup :-)

Wow – have to say my first thought wasn’t “ooh, healthy”, it was “yum”! What a bonus that it’s healthy!

It looks that good and it’s healthy…I’m all over it! thanks.

WOW looks fantastic. Love the idea of adding Avocado, should try out? Is there an alternate for tofu you can suggest?
Sarah, Maison Cupcake
I just read a tofu chocolate mousse recipe somewhere yesterday, I would love to try it!
For the Love of Food
Thank you for the post! My roommate has been begging me to make a chocolate mousse for a couple of months now, but I have been waiting for the right recipe to come along (or rather for me to stumble over) that doesn’t make me feel so guilty. This sounds delicious and healthy. And I love the espresso cup idea! I will be trying this soon.

I missed this one Helen. I am going to give it a try. Cooper loves his chocolate pudding, but has gone off avocadoes, which he used to love. I will try adding an avocado next time and some orange peel. Think he will like it without the sweetness of the maple syrup.
He just actually finished a batch of chocolate pudding this lunchtime. It’s great, he gets a treat, but I know it is full of goodness for him. Win, win!

I’m going to make this and spoon (or pipe) it into tiny crisp pastry cases for a teatime treat
