I love this recipe from Lion eggs from the Crumbs sisters. Quick easy and fuss free it is the perfect thing for breakfast, brunch, lunch or supper. Eggs are great, perfectly packaged, adaptable, protein packed and delicious.
Simply sauté some cherry tomatoes, red pepper and garlic for a few minutes, until soft, add the herbs and cheese, crack on the eggs sprinkle with pepper and bake. I’d be tempted to add some chopped chorizo and some chilli too!
