The joy of cake sprinkles! It is not for nothing that Pinterest has seemingly endless “Funfetti” pins – cakes, cookies, ice cream – you name it and you can liberally add cake sprinkles and make something rather everyday into rather more fun and joyful!
These fun pancakes which also contain a banana (any excuse to add some extra fruit or veg into my food), were made for the release of Annie, starring Jamie Foxx, Quvenzhané Wallis & Cameron Diaz. I am sure that the eternally optimistic and cheerful Annie would approve of the easy recipe and the addition of the sprinkles even if the sun does not come out tomorrow!
Recipe: Banana Funfetti American Style Pancakes
Ingredients
- 2 free range eggs
- 75 ml semi skinned milk
- 1 small banana
- 120 g plain white flour
- 1 tsp baking powder
- Butter
- 1 tbs cake sprinkles
- Maple syrup to serve
Instructions
- Whizz the eggs, milk and banana in a blender. Add the flour and gently whizz until mixed. Do not mix, as this will result in tough pancakes.
- Heat a little of the butter in a frying pan over a medium heat, ladle in a spoon of the pancake mixture, nudge into a circular shape and liberally cover with sprinkles.
- Turn once, when the bubbles rise to the surface. Keep warm in the oven whilst you cook the rest, or eat straight from the pan with butter and maple syrup.

Crispy on the outside, still quite fluffy on the inside – epiphany of the perfect pancakes! I simply adore banana pancakes, and the funfetti make them even more delicious and attractive. Sometimes Maple syrup, of course, is the final ingredient that gives them an identity!
