You will love this easy salmon ceviche recipe, pair it with a herbed mayonnaise to make impressive and delicious canapés.
I love canapés, I really love canapés. There is something super delicious about cocktail party food and when at a party I am quite adept in manoeuvring myself to the corner nearest to the kitchen where the canapés appear from. I am quite sure that if I was presented with a plate with all the canapés I had consumed at a party I’d be horrified, but I am equally sure that food eaten standing up does not really count?
For this simple, easy to make canapé, I’ve made a simple salmon ceviche – served on a bed of creamy herbed mayonnaise. Prepare the fish and the mayonnaise in advance and assemble on a spoon (or cracker) when your guests arrive.
I’ve made this recipe for the launch of Heinz Seriously Good mayonnaise. It is thick, creamy, has just the right amount of tang and importantly for us is made with free range eggs, as well as being free from no added colours, flavours or artificial thickeners.
It certainly is Seriously Good too – Ed and I both tasted it blind against a leading branded mayonnaise, which I have been buying for years, and we both preferred the Heinz Seriously Good.
Recipe: Salmon ceviche canapés with herbed mayonnaise
Ingredients
- For the herbed mayonnaise
- 6 tbs mayonnaise
- zest of a lime - finely grated
- 2 tbs finely chopped coriander
- For the salmon ceviche
- juice 2 limes
- 1 tsp soy sauce
- 1/2 fresh ginger finely grated
- 1 cm salmon fillet - skin removed and cut into 1/2 slices
- Extra coriander to garnish
Instructions
- Place the mayonnaise, lime zest & coriander into a bowl and mix well. Season to taste with salt and pepper. Cover and keep in the fridge for up to one day.
- hour before you serve mix the lime juice, soy sauce and ginger in a bowl and add the salmon, mix and allow the acid in the lime juice to "cook" the salmon. Cut the salmon into triangles.
- To serve place a piece of the salmon onto a spoon of the herbed mayonnaise and garnish with a coriander leaf.
