Total Time12 minutes mins
- 1 tsp butter
- 1/2 small onion - (finely chopped)
- 1 clove garlic - (peeled and chopped)
- 60 ml double cream
- 50 g Stilton - (crumbled. You can use any other blue cheese)
- 1 splash milk - (if needed)
- 1 squeeze lemon juice
- Salt and pepper to taste
Melt the butter in a frying pan. Fry the onion and garlic with a pinch of salt until starting to turn golden.
Turn the heat down and add the cream, then the Stilton. Stir over a low heat until the Stilton has melted. If needed thin the sauce with a splash of milk
Add a squeeze of lemon to cut through the richness and lighten the sauce. Season with salt and pepper and serve.
- Prepare in advance and then reheat. Add milk to thin if needed.
- You can save time and use pre-chopped frozen onion. When I have half an onion spare, I dice it, freeze it (spread out on a silicone mat), and keep it in the freezer in an airtight plastic box.
