Recipe: Banana Funfetti American Style Pancakes

Fun, easy to make, pancakes to brighten the dullest of mornings

Ingredients

  • 2 free range eggs
  • 75 ml semi skinned milk
  • 1 small banana
  • 120 g plain white flour
  • 1 tsp baking powder
  • Butter
  • 1 tbs cake sprinkles
  • Maple syrup to serve

Instructions

  • Whizz the eggs, milk and banana in a blender. Add the flour and gently whizz until mixed. Do not mix, as this will result in tough pancakes.
  • Heat a little of the butter in a frying pan over a medium heat, ladle in a spoon of the pancake mixture, nudge into a circular shape and liberally cover with sprinkles.
  • Turn once, when the bubbles rise to the surface. Keep warm in the oven whilst you cook the rest, or eat straight from the pan with butter and maple syrup.
