Recipe: Banana Funfetti American Style Pancakes
Fun, easy to make, pancakes to brighten the dullest of mornings

- 2 free range eggs
- 75 ml semi skinned milk
- 1 small banana
- 120 g plain white flour
- 1 tsp baking powder
- Butter
- 1 tbs cake sprinkles
- Maple syrup to serve
Whizz the eggs, milk and banana in a blender. Add the flour and gently whizz until mixed. Do not mix, as this will result in tough pancakes.
Heat a little of the butter in a frying pan over a medium heat, ladle in a spoon of the pancake mixture, nudge into a circular shape and liberally cover with sprinkles.
Turn once, when the bubbles rise to the surface. Keep warm in the oven whilst you cook the rest, or eat straight from the pan with butter and maple syrup.
