  • ½ Galia melon – use a Honeydew for a sweeter drink
  • 100 ml of gin
  • Squeeze of lemon
To Serve
  • 2 slices of lemon
  • 2 sprigs of mint
  1. Peel, deseed and chop the melon into bite sized pieces. Spread out on to a baking mat and freeze. Once frozen pack into a plastic box or bag. (Or if you do not have a high powered blender blitz the melon and gin and freeze)
  2. Blend the melon, gin and lemon juice until smooth. Pour into glasses and garnish with a slice of lemon and a sprig of mint.
  3. If you do not have a high powered blender then blend unfrozen melon with the gin, pour into a jar and freeze. Remove from the freezer and give it a bash with a fork before serving.
  4. Serve immediately and enjoy elegantly.
