Total Time5 minutes

Ingredients

For the basic tahini dressing

  • 250 ml tahini
  • 4 tbs olive oil - (use a good quality)
  • 1 tsp garlic powder - (vary according to taste)
  • salt and pepper - (vary according to taste)
  • 250 ml water

Instructions

Basic tahini dressing

  • Stir the tahini well as it separates over time.  Mix the the tahini, olive oil and garlic powder together. Season with salt and pepper.
  • Slowly start to add the water, mixing in with a whisk
  • The mixture will initially thin, then it will dramatically thicken and look curdled.  DON'T WORRY.  Keep adding the water whisking all the time.
  • Eventually the thick, curdled mixture will magically transform to a creamy dressing.   For the thick tahini dressing you will need about 80% of the volume of the tahini in water.
  • The thin tahini dressing will have about the same volume of tahini and water and should have a coating consistency.

Lemon Tahini Dressing (with herbs)

  • Add juice, zest and finely chopped herbs to thick tahini dressing, and stir together.

Yogurt Tahini Dressing

  • Stir the yogurt and tahini dressing together until smooth. Adjust quantities to give the consistency you want.

Japanese Miso Tahini Dressing

  • Mix thick tahini dressing, sweet white miso, tamari, and finely chopped nori, or other seaweed. If you want a stronger flavour, use a different style of miso. To ensure a gluten free dressing, use tamari rather than regular soy sauce.

Indian Tahini Dressing

  • Mix thin tahini dressing, curry powder or paste, turmeric and chili sauce. Adjust the amounts to taste. If the sauce it too spicy, add some Greek yogurt.
  • For a more mellow sauce, dry fry the curry powder and turmeric before combining with the tahini. Allow to cool.

Italian Tahini Dressing

  • Mix thin tahini dressing, sundried tomato paste, balsamic vinegar and finely chopped fresh basil.

Garlic Tahini Dressing

  • Add crushed garlic to thin tahini dressing. Start with one clove per 60ml of dressing, and adjust amounts to your preference.
  • For a more mellow garlic flavour, slowly fry the garlic in a little oil Allow to cool.

Maple Tahini Dressing

  • Stir maple syrup into thin tahini dressing.

Notes

  • Serving size is one tablespoon.
  • A good quality curry paste will be better than using curry powder for the Indian dressing.
