Cajun Seasoning
Bring a taste of the Southern USA and add a delicious signature smoky, spicy kick to your Cajun inspired dishes

- 1 tbsp smoked paprika
- 1 tbsp hot chilli powder / Cayenne - to taste
- 1 tbsp ground cumin
- 1 tbsp garlic powder
- 1 tbsp oregano
- 1 tbsp thyme
- 1 tbsp ground black pepper
Mix - Put all the ingredients into a bowl, mix briefly until well combined. I find the best thing is a mini whisk to break up any clumps of finely ground spices.

Store - Transfer to a storage jar with a good seal. I usually use a jam funnel for this to prevent spills.
Variations
Adjust the heat by changing to a chilli powder with a different level of heat.
Or, try smoke dried chipotle chilli, for a smokier flavour.
Storage
As with all spices, store in a cool, dark, dry cupboard or drawer. The shortest date on the ingredients is the ‘best before’ date, though the spice mix will not go off if stored correctly. Write the best before date on a label, and stick it to the jar. The flavour will diminish over time if you keep it for years.
How to use
2-3 teaspoons of seasoning for two people for a main dish, and 1 generous teaspoon for a side for two.
Cajun spice mixture is so versatile, with many different uses. Here are some of my favourites:
- As a rub for meat, fish or seafood, or use as a seasoning to a dish such as jambalaya
- With potatoes: add to fried potatoes half way through cooking, or a seasoning for hasselback potatoes.
- Add to soups and stews for an added layer of flavour and complexity.
- Simply use it any time you would use pepper!
