Creamy Tahini Dressing
Tahini dressing is thick, rich and deliciously creamy, uses only three store cupboard ingredients and goes with everything. Recipe contains instructions for a thick dressing you can spoon, or a thinner version for pouring or coating.
Servings: 25 (makes about 2 cups / 500ml)

- 240 ml tahini
- 4 tbs olive oil - good quality
- 1 tsp garlic powder - optional
- salt & pepper
- 240 ml water
Prepare the tahini - If your tahini has separated then give it a good stir until it is smooth. I find it can be fairly solid at the bottom of the container so you may need to use a fork to break it up and this can take several minutes. Transfer to a mixing bowl. 240 ml tahini
Add the oil - Pour i the olive oil and mix int the tahini.

Add the water - Slowly drizzle in the water mixing all the time with a whisk. The mixture will initially thin, and then as you add more water it will thicken and look curdled. DON'T WORRY. Keep adding the water and keep whisking The thick, curdled mixture will magically transform to a creamy emulsified dressing.
240 ml water
Keep adding water until you reach your desired consistency. Thick Tahini Dressing (which can be spooned) - Add about 180ml / ¾ cup water (75 - 80% of the tahini by volume)Thin Tahini Dressing (pourable or coating consistency) - Keep adding the water until you have used all 240ml / 1 cup. (Same volume as the tahini) Season to taste with salt, freshly ground black pepper and a pinch of garlic powder.
1 tsp garlic powder, salt & pepper
Transfer to a jar and keep in the fridge. Use within 5 days. The dressing shouldn't separate, but if it does stir before use.
