Vegetarian Quiche Lorraine

Easy vegetarian mini quiche lorraines made with Quorn Vegan Ham Free Slices – perfect for picnics and parties.

Ingredients

  • 1 tsp butter
  • ½ small onion - finely diced
  • 4 slices Quorn Smoky Vegan Ham Free Slices
  • 1 tsp dark soy sauce - optional
  • 2 eggs
  • 60 ml double cream
  • 60 ml milk
  • 25 g finely grated vegetarian cheddar
  • 1 tsp chopped chives
  • 1 packet ready rolled puff pastry

Instructions

  • Preheat the oven to 200°C / Gas Mark 6.
  • Chop the onion into small pieces.
    Melt the butter in a small frying pan over a medium heat, and sauté the onion for a few minutes until translucent and fragrant.
    Remove from the pan and set to one side.
  • Chop up the Quorn Vegan Smoky Ham Free Slices and fry for a few minutes. Add a dash of soy sauce to give it some extra smokiness, if that's how you like your bacon.
  • Add the eggs, cream and milk to a jug and whisk until mixed. Add the onion, ham free pieces, cheddar, and chives. Season well and stir in.
  • Use a round cutter to cut 9–10 circles of pastry and lightly press them into a non-stick bun or muffin pan.
    Pour the filling into each of the pastry cases, making sure you get some pieces of ham free slices and onion into each, so the cases are about 3/4 full.
  • Bake for about 25 minutes until golden, puffed and just set.
  • Allow to cool for 5 minutes before carefully removing from the tin and letting cool on a wire rack.
    Store any leftovers in a airtight tin for a day and reheat in a gentle oven.
