Recipe: Gin and Melon Slushie

A delicious refreshing cocktail made by blending gin and frozen melon.  This gin and melon slushie cocktail is perfect and refreshing for the hottest days of summer. Whizz in the blender and freeze!

Ingredients

  • ½ Galia melon – use a Honeydew for a sweeter drink
  • 100 ml of gin
  • Squeeze of lemon

To Serve

  • 2 slices of lemon
  • 2 sprigs of mint

Instructions

  • Peel, deseed and chop the melon into bite sized pieces. Spread out on to a baking mat and freeze. Once frozen pack into a plastic box or bag. (Or if you do not have a high powered blender blitz the melon and gin and freeze)
  • Blend the melon, gin and lemon juice until smooth. Pour into glasses and garnish with a slice of lemon and a sprig of mint.
  • If you do not have a high powered blender then blend unfrozen melon with the gin, pour into a jar and freeze. Remove from the freezer and give it a bash with a fork before serving.
  • Serve immediately and enjoy elegantly.
