Strawberry Proseccco Slushie
A delicious celebration drink for a hot evening

- 100 ml elderflower cordial
- 200 g strawberries - and a few extra to garnish
- 100 ml water
- 400 ml prosecco
- mint leaves and lemon slices to garnish - (optional)
Put the water, cordial and strawberries in a pan. Gently simmer until the fruit is soft. Mash fruit.
Pass the mixture through a sieve. Use a spoon or spatula to press the flesh through. Then discard any pips left in the sieve. Then allow to cool.
Mix the strawberry and elderflower with the same volume of prosecco. Freeze the mixture.
When you are ready to serve, break the frozen strawberry mixture up with a fork. Blitz in the blender. Then add about the same volume again of prosecco. Blend again until smooth. Then serve in chilled cocktail glasses.
