Strawberry Proseccco Slushie

A delicious celebration drink for a hot evening

  • 100 ml elderflower cordial
  • 200 g strawberries - and a few extra to garnish
  • 100 ml water
  • 400 ml prosecco
  • mint leaves and lemon slices to garnish - (optional)


  • Put the water, cordial and strawberries in a pan. Gently simmer until the fruit is soft. Mash fruit.
  • Pass the mixture through a sieve. Use a spoon or spatula to press the flesh through. Then discard any pips left in the sieve. Then allow to cool.
  • Mix the strawberry and elderflower with the same volume of prosecco. Freeze the mixture.
  • When you are ready to serve, break the frozen strawberry mixture up with a fork. Blitz in the blender. Then add about the same volume again of prosecco. Blend again until smooth. Then serve in chilled cocktail glasses.
