Small Batch Blackberry Jam

Very quick, easy and delicious blackberry jam with just three ingredients. Small batch recipe which makes two jars.  Ideal for the beginner jam maker or preserver.

Ingredients

  • 450 g blackberries
  • 450 g sugar
  • 2 tbsp lemon juice

Instructions

  • Prepare the fruit - Wash the blackberries discarding any which are damaged or over ripe and place in a saucepan. 
    Add the sugar and lemon juice and stir.
    Leave for an hour to allow the sugar to draw the juice from the fruit.

  • Cook the jam - Once the sugar has drawn out the blackberry juice cook on low heat, stirring frequently to dissolve the sugar. Heat slowly at first, bringing the jam mixture to a simmer and stirring to ensure that no fruit sticks to the base of the pan and burns.
    Put clean jam jars into the oven to sterilize.
  • Heat to setting point - Cook the jam at a rolling boil until it reaches setting point. Stir frequently, running a spoon or spatula over the bottom of the pan so that none of the fruit sticks and burns.
    Test for setting point once a thermometer reaches 105C with either the flake or wrinkle test. DO NOT rely just on temperature.
  • Pot the jam - Let the jam sit in the jug for a few minutes to cool and thicken before potting.
    Use a glass jug and a jam funnel for ease and less mess. I like to keep the jars on a roasting tray just in case one shatters.
    Screw the lids down lightly and allow to cool.

Notes

  • Wild blackberries have more pectin than farmed. If your berries are especially tart - but still ripe - you can use less lemon juice.
  • 450g of blackberries will fill 2 x 250ml jars or will make just over 2 cups of jam.
  • 450g of wild blackberries is approximately a litre or a generous 4 cups.
