If you are anything like me it can sometimes feel that it takes as long to take every jar out of the cupboard, find the ones you need, and put them back, as it does to make the rest of the recipe.
And then you open the cupboard again and all the jars avalanche out! Just me?

This fajita seasoning recipe is based around smoked paprika and chilli powder, with garlic, coriander, cumin and oregano to add earthy flavours.
I cook for two, I usually make batch of fajita spice mixture for 4-6 meals, but of course it is super simple to bulk up if you cook for more, or eat fajitas more than we do.

Fajita seasoning recipe ingredients
- Smoked paprika – I love hot smoky flavours and a good smoked paprika forms the base for this seasoning. Some sweetness, a little heat and all that lovely smoky flavour.
- Chilli powder – adds the essential heat to the mixture. I suggest a medium chilli powder, but use what you like – if you love the heat amp up the strength – remember that adding more mild chilli will change the balance of flavours.
- Dried oregano – adds a warm and earthy flavours to this mix. Its robust, slightly bitter is primarily earthy, but with green flavours of hay and a hint of mint.
- Garlic powder – by using powder, you add garlic flavours to your fajitas, and save time compared to using fresh.
- Ground cumin and coriander – these two spices add earthiness, and round the flavour.
- Black Pepper – for some more heat and warmth – I like a course ground.
- Salt – I like large, flakey salt crystals in this mixture, rather than fine cooking salt.
How to make fajita seasoning – step by step

Step One – Put all the ingredients into a bowl and give them a good stir to thoroughly mix. I like to use a mini whisk to break up any clumps.
Step Two – Transfer to an airtight jar and seal. A jam funnel makes this easy and minimises any spills.
Variations
- Adjust how hot the fajita seasoning is by using a hotter or milder chilli. Adding more or less will change the balance of flavours in this blend.
- Try smoked dried chipotle chilli, for a smokier flavour.
How to use
You need 3-4 tsp of this fajita spice blend for about 500g / 1lb of meat. But adjust according to taste.
Not all dried herbs and spices are the same. Different brands have vastly different shelf lives and potency.

Storage
Store the seasoning in an airtight container in a cool, dry cupboard, and it will last for a few months. Don’t try and store it for years, because the spices will lose their flavour. A jam jar is the perfect container, as the glass won’t get tainted by the spices.
The use by date is the shortest date of any of the ingredients.
Hints and tips
- Write the use by date on a label, and stick it to the jar.
- Before using the mixture, give the container a good shake to make sure everything is evenly distributed. A stir with a teaspoon can also do the same job.
- It’s better to mix the ingredients in a bowl and transfer them to a jar, as you can check that everything is evenly distributed.

- 2 tbsp smoked paprika
- 1 tbsp ground cumin
- 1 tbsp garlic powder
- 1 tbsp oregano
- ½ tbsp ground coriander
- ½ tbsp hot chilli powder (to taste)
- ½ tsp ground black pepper
- ½ tsp salt

- Mix – Put all the ingredients into a bowl, mix briefly until well combined. - Store – Transfer to a storage jar with a good seal. I usually use a jam funnel for this to prevent spills.
