Protein packed Breakfast
I find that the start to my morning can make or break the entire day. I need to get up, have breakfast and get to it. If I lose focus and don’t get on in the morning, then for some reason the rest of the day just seems to slide.
A good breakfast is so important for setting myself up for the day. I like to sit at the kitchen table with something healthy to eat and the obligatory mug (or two) of coffee, and plan my day.
A good breakfast needs to be nutritious, filling, warming in the winter, and crucially, easy to prepare. My ideal morning meal can be prepared the night before, ready to be whipped out of the fridge. Better still if it can be left to cook while we take Herbert the dachshund round the block.
Protein Baked Oats
Protein baked oats tick all my boxes for a good breakfast. Filling and warming on a winter morning, they set you up for the day. You can prepare the batter the night before then cook them first thing, or bake the oats and quickly reheat in the oven of microwave before serving. If you bake a few in muffin cases, you have a perfect grab and go breakfast too.
A protein breakfast tends to delay hunger pangs. Combined with the slow release energy of oats, I find this baked oats recipe a great way to keep me going through until lunch time without snacking. The protein here comes from cottage cheese and eggs.
I like to make sure I have some fruit and veg at every meal, and I have used frozen mixed berries here. Fresh berries are great too, of course, but I like to make this dish in the cooler months. A packet of mixed berries is a freezer staple for me. They are ideal for throwing into bakes, cakes, smoothies, pies or crumbles. They work perfectly in this recipe.
Protein Baked Oats – Recipe Step By Step
Step One – Measure out your ingredients. The recipe can be easily scaled for different numbers of people. Heat oven to 160°C (fan)/350°F/Gas Mark 4.
Step Two – Mix the oats and baking powder. Then add the eggs, cottage cheese, and vanilla extract and mix in. This recipe is easy to mix by hand – no electric mixer required.
Step Three – Cut the larger pieces of frozen fruit, such as blackberries, in half. Add all the frozen fruit to the mixture and stir together.
Step Four – Spoon the mixture into individual ramekin dishes, mini casseroles, muffin cases. Alternatively you can use a tray bake tin or gratin dish to make a family sized oat bake to cut into slices.
Step Five – Bake for 30–40 minutes until puffed and golden brown. Enjoy!
Hints & Tips for Protein Baked Oats
- I recommend mixing your protein baked oats by hand – you don’t need a mixer and it results in less washing up!
- Because of the berries, the bake might collapse slightly once it cools. Cutting the larger berries up helps prevent this.
Can I make this in advance?
- Yes! You can mix the batter the evening before and then stir in the berries and bake in the morning.
- Once baked, cover and keep in the fridge for up to 3 days. You can reheat your baked oats in a low oven or microwave for 30 seconds.
Using Frozen Berries
Mixed berries are a freezer staple for me. When baking with them, add them last and use them from frozen. This helps to avoid the juices spreading, resulting in a colour “bleed” throughout the dish. I prefer to cut up the largest of the berries, for even distribution and to avoid the bake sinking. You can, of course, use fresh berries. If you do, just reduce the cooking time by 5 minutes.

Ingredients
- 160 g oats
- 2 tsp baking powder
- 400 g cottage cheese
- 4 eggs
- 1 tsp vanilla extract
- 200 g frozen mixed berries (or fresh fruit in season)
Instructions
- Heat oven to 160°C (Fan)/350°F/Gas Mark 4.
- Mix oats and baking powder. Add cottage cheese, eggs and vanilla extract and mix into the oats.
- Cut any larger berries in half. Add the fruit to the mixture, and stir in.
- Spoon the mixture into individual 10 cm /4" ramekin dishes, or a baking tray or gratin dish.
- Bake for 30 minutes, until golden brown.
