Garlic Parmesan fries are the ultimate combination of all the savoury treats we crave – crispy potato, fragrant garlic and indulgent cheese. This oven-baked indulgence is easy to make at home without all the mess of a deep-fat fryer. As well as being super speedy using oven chips keeps the calories in check too.
Garlic Parmesan Fries
Chips and wedges are lovely, but really I love them with an extra something. These oven-baked garlic Parmesan fries are a great combination – a hint of garlic bite with rich, strong Parmesan cheese and crispy fries. Because they are oven-baked, you can add the cheese without turning them into an oily mess.
Using oven chips makes these so simple, without any deep fat frying mess or hassle. Commercial wedges tend to come doused in all sorts of flavourings. Seasoning plain chips yourself avoids unwanted additives and they taste even better.
I find that buying a quality brand of oven chips over the supermarket basics or budget brand does make a difference. The chips are a more regular size, which makes it easier to have them all perfectly crispy at the same moment.
This recipe takes a few minutes to prepare and assemble. Only four ingredients are needed, and you gently sauté the garlic while the oven chips bake in the oven.
The crucial thing to remember is that you mustn’t cook the garlic too quickly. Garlic burns easily if cooked at too high a temperature, and burnt garlic is bitter.
What to Eat with Garlic Parmesan Fries
My oven-baked garlic parmesan chips (or wedges, if you prefer) are great by themselves as a cheeky snack. They also make a great accompaniment to a quality home-made burger.

Weighing the fries rather than just pouring them out of the bag really helps with portion control!
Step one – Cook the oven chips according to packet instructions. We get deliciously crispy oven chips when we cook them on an oven-proof mesh tray. These cost just a couple of pounds, go through the dishwasher without any bother and last for years, so I recommend buying one.
Of course, you also can make chips or wedges from scratch or cook in an Actifry or air fryer.

It’s important to spread the chips out so that they don’t sit on top of each other because this can cause them to steam rather than bake. Crispy chips are a must!
Step two – As the chips are cooking, melt the butter in a large frying pan on a low heat. Add the garlic to the melted butter, and sauté gently.
Cooking the garlic slowly will maximise the flavour and reduce the likelihood of burning, which can produce bitterness.

It is important not to fry the garlic hard. Instead, you want to let it sit in the hot melted butter, stirring from time to time so all the favour infuses into the butter.
Step three – Add the chips to the butter and garlic, and stir well to evenly coat the chips.
Step four – Add the grated Parmesan cheese and optional finely chopped parsley. Stir well again. Eat your garlic Parmesan chips while they’re hot and crispy!

- Buy good quality oven fries, because this really makes a difference to the final result.
- Don’t just use chips! Make garlic Parmesan wedges or even add some garlic zing to roast potatoes to go with a juicy roast chicken.
- Vary the quantity of garlic to suit your taste. If you are vegetarian, use a veggie grana-style hard cheese.
- Make your own chips. Cook the chips as normal, in a deep fat fryer or Actifry or other air fryer and then add to the garlic butter mix. Then add the Parmesan as above.
- For quick and hassle-free chips, make double the amount of garlic butter, and freeze half of it. Then next time you have a yearning for garlic Parmesan chips, simply melt the butter in a frying pan and add the cooked chips.
- For crisper oven chips, bake them on a mesh tray. These only cost a couple of pounds, last for years and go through the dishwasher without any trouble. They really make a difference so do buy one.
- Serve garlic Parmesan fries or wedges straight away. You can reheat them in the oven on a baking tray, but they’re not nearly as good as fresh.

Ingredients
- 250 g oven chips
- 1 tsp Butter
- 2 clove garlic (peeled, finely chopped)
- ½ cup Parmesan (grana) cheese (grated)
- ¼ cup parsley (optional)
Instructions
- Preheat the oven and cook the oven chips as per the packet instructions. I always get far better results if I use a mesh or crisper tray for cooking oven chips.
- Melt the butter over a low heat in a large frying pan. Add the garlic and cook slowly to release all the flavours. Garlic can burn easily if cooked at too high a temperature, so keep the heat low.
- Once the oven chips are cooked and golden brown, add them to the butter and stir to coat the chip evenly in the garlic butter.
