Valentine’s day is fast approaching, and I am delighted to share these pretty pink Eton Mess flavoured cupcakes that I have made for Jelly Belly. Pop over to Bean World for the recipe.
For some Valentine’s present ideas have a peak at my food gift guide. And if you love cupcakes, then you need to try my dark and stormy cupcakes!
This is a commissioned recipe for Jelly Belly – Recipe, styling and photography are my own.

They’re super duper cute! Love the idea! I forgot how easy and delicious are muffins and cupcakes. It’s time to make some of my own :)
Helen
Thanks Sylvia. I was rather pleased with them!
Glamorous Glutton
Very pretty, perfect for valentines day. GG
Helen
Thank you!

Absolutely gorgeous and I love the idea of using Mascarpone for the frosting with jelly beans to decorate. Beautiful styling and photography, too.
Helen
I love Mascarpone frosting, so delicious and much lighter then buttercream. I was rather pleased with the photos and styling. It somehow just all came together easily for once.
Sarah, Maison Cupcake
So pretty, they’re like speckled eggs – and I bought a birthday card in that same paper bag on Saturday!
Helen
Katie bought a card when I was with her. I snatched the bag from her with indecent haste!
Tina @ The Spicy Pear
They look so pretty. I love homemade cupcakes and this looks perfect for Valentines day.
Helen
Thank you Tina.
Choclette
They are very pretty Helen, so dainty too. Mascarpone makes a great topping I find.
Helen
Thank you – I should have made bite sized ones too!
Heidi Roberts
They look so pretty and delicate. I often use marscapone and philly in my icings, I don’t like pure buttercream it can be too sweet!
Helen
I agree Heidi. Although buttercream lasts longer our of the fridge than a soft cheese based forsting.
Janie
Such cute cupcakes!

Thank you Janie.

lmao, ok you are forgiven for doing icky valentines stuff on the basis that you got engaged recently AND that this is a sponsored post from the lovely jelly beans people. I think now I’ll go back to putting my head under the pillow till after the 14th (or writing about vinegar for the next 7 days)
Helen
These fall firmly into the commissioned work category Fiona! I am very pleased with them however. I did get a press release about a Valentine’s vinegar however.

Very pretty. Very pink!! your mascarpone frosting here looks divine. I have recently discovered toasted marshmallow buttercream. It is also fab though not tried it as a topping yet only a filling. the pictures look fab Helen.
Helen
Thank you Nazima, will try the toasted marshmallow buttercream. sounds divine!!

I agree and think Mascarpone is so much nicer and I have just used some in a lime cheesecake filling. It is silkier, and your toppings are just perfect.
Helen
Thanks Laura. So delicious.
Jacqueline Meldrum
Nice idea Helen and a very pretty treat.
Helen
Thank you!

Just seeing these now Helen. These look fantastic – I’m a sucker for anything Eton Mess related, ever since trying it for the first time a couple years ago. They look stunning as well!
