Jelly Belly Eton Mess Valentines Day Cupcakes

Valentine’s day is fast approaching, and I am delighted to share these pretty pink Eton Mess flavoured cupcakes that I have made for Jelly Belly.  Pop over to Bean World for the recipe.

      I love Mascarpone frosting, so delicious and much lighter then buttercream. I was rather pleased with the photos and styling. It somehow just all came together easily for once.

    They look so pretty and delicate. I often use marscapone and philly in my icings, I don’t like pure buttercream it can be too sweet!

      I agree Heidi. Although buttercream lasts longer our of the fridge than a soft cheese based forsting.

    Very pretty. Very pink!! your mascarpone frosting here looks divine. I have recently discovered toasted marshmallow buttercream. It is also fab though not tried it as a topping yet only a filling. the pictures look fab Helen.
