This seriously easy hot cheese dip recipe is the ultimate cheesy, gooey comfort food, made with tasty strong cheddar. Dip vegetable crudités, tortilla and other crisps, or chunky chips! Add extra liquid to make a pasta sauce!

Hot, gooey, melted cheese!

I love this seriously easy cheddar cheese dip; rich, hot gooey and unctuous, it’s perfect for an evening on the sofa with a box set.

Serve with crisps, crackers, crusty bread or raw vegetable crudités and just dip! Share with friends or keep it all to yourself!

In the past, I have followed elaborate instructions for fancy cheese fondue with gorgeous results, but this super easy hot cheese dip recipe is my new favourite. Quick and simple, it’s great for a friends and family fondue night without the need for a fancy fondue pan. 

The secret to this easy hot dip is using cornflour. It thickens the sauce and gives that lovely takeout-style gloopyness.

Why You’ll Love My Seriously Easy Cheese Dip

  • Save money! Don’t spend pounds buying a ready-made cheese melting pot, when the ingredients for this dip cost just pennies.
  • With only six ingredients, my hot cheese dip has no preservatives – unlike shop bought ready made melting pots.
  • It’s a forgiving and adaptable recipe, so you can easily change the cheese to your favourite, and add or subtract spices to your taste and your mood. 
  • Make ahead and reheat in the microwave. 
  • Add extra liquid to make an easy gluten free cheese sauce – perfect for pasta

How to Make Cheese Dip

Step one – As always, measure out the ingredients. We like a good strong cheddar, but use your favourite cheese.  

You need grated cheese, cornflour, milk, and some garlic powder, as well as turmeric and tomato puree for colour.

Step two – Mix together the grated cheese and cornflour, until the cheese is well coated. I find the easiest way to do this is to tip it into a plastic box and give it a good shake.

Step three – Add all the ingredients to a saucepan. Heat gently for a couple of minutes, stirring constantly.

Step four – The cheese will melt into the milk. Keep stirring!

Step five – When the dip has thickened, serve immediately. If you want to make it in advance, you can set it aside and then reheat in the microwave for 30 seconds on half power.   

Hints & Tips for Seriously Easy Cheese Dip

  • The turmeric and tomato puree are optional, but they do make this dip a gorgeous rich orange colour and a give a real punch that suits tortilla chips. You could add a little red chilli too, to create a Mexican feel. 
  • Substitute some of the cheddar with mozzarella for a really stringy dip.
  • Try a different cheese like a good mature Red Leicester.
  • Leave out the garlic powder if it’s not your thing. You could use a little mustard instead.  
  • You could add curry powder for a hint of heat, resulting in a delicious cheesy curry sauce for chips.
  • Add some Italian seasoning. 
  • Serve with a dollop of onion chutney for an onion cheese melting pot.
  • Make a double or quadruple batch and serve in a fondue pan over a low flame at a party – try using gruyère and Dijon mustard instead of the cheddar and tomato.

  • Homemade tortilla chips,

  • Melba toast.

Seriously Easy Cheese Dip

The ultimate cheesy, gooey, comfort food: a deliciously rich, molten cheese dip that's perfect served with fresh crusty bread and vegetable crudités. Thickened with cornflour this is naturally gluten-free. Add some extra liquid to make the easiest cheese sauce.

Ingredients

  • 2 tsp cornflour
  • 70 g cheese (grated)
  • 70 ml milk
  • ½ tsp turmeric (optional)
  • ½ tsp tomato puree
  • ½ tsp garlic powder (optional)

Instructions

  • Mix the cornflour and grated cheese, either by stirring together in a bowl or by shaking in a plastic box.
  • Put all the ingredients into a saucepan and heat gently on a low heat, stirring constantly.
  • After a couple of minutes, the dip will thicken. Serve immediately.

    Made this last week, swapped out the cheddar for red leicester red fox mature cheese, and about 1/4 teaspoon of Italian seasoning…. wow great for watching the Monday Night Football (NFL) totally enjoyed this, definite keeper, thanks
