I really enjoy variety at breakfast, particularly at weekends. While I’m always looking for everything I cook to be as fuss free as it can, sometimes spending a little more time and effort really makes a difference. We’ve enjoyed breakfast muffins, smoothies, pancakes and waffles in the past, and here’s another string to our breakfast bow: the breakfast sundae!
During the week, who has time for a studied, relaxed breakfast? Not me, and I would think that I’m far from alone! And while I do like to spend a bit more time preparing weekend breakfasts, I don’t go mad: I want something tasty, that looks good, that really marks out the weekend as different from the working week, but not so over the top that takes ages in the kitchen. A sundae is perfect for that.
Eating a sundae with ice cream first thing would really be a bit too rich, so I’ve gone for the low fat and lower calorie option of yoomoo frozen yogurt. It’s really tasty, and available in vanilla and strawberry flavours so you can mix and match the sundae according to how you’re feeling. The strawberry flavour is swirled with strawberry sauce, both looks and tastes great. We really love the texture of this fro-yo: light and fluffy. yoomoo is also available as frozen lollies, in mixed berry, strawberry and tropical flavours. Now one of those would really be a breakfast with a difference!
Taking time over breakfast at the weekend is a real treat; an opportunity to reflect on the week, review the week to come and be the best version of myself. I’m not alone in this, the folks at yoomoo are great believers too, even to the extent of calling it yootime. I have to admit that the pun tickles: me time as you/yoo time. Whatever it’s called, taking some time for myself is a bit of self care that really reaps dividends.
How do I make a frozen yogurt breakfast sundae?
First, make the fruit compote. This can be made ahead of time, and will keep in the fridge for a few days.
Defrost the frozen fruit (take out strawberries and they contain too much water and become too mushy).
Heat the defrosted fruit in a saucepan, and add the water. After the mixture has warmed through, spoon off some liquid into a small bowl and add the cornflour.
Mix to a paste, and add back to the compote, stir it in and allow to simmer for a few minutes to thicken a little. Sweeten with maple syrup as required.
In the morning, make the sundaes. Spoon some compote into the bottom of a tall sundae glass, and spoon in some of the granola and your choice of mixed beries
Add the yoomoo frozen yogurt to the glasses, and top with more granola and compote
Garnish with fresh berries add a cocktail umbrella, and enjoy!
Our top cornflour tip
Cornflour is an excellent thickener, but you need to use it right. NEVER just add cornflour to a liquid: it’ll just clump and won’t thicken the sauce.
Rather, spoon of a little sauce into a small bowl or ramekin. Add the cornflour, and mix to a smooth paste.
Add the paste back into your recipe and there you are: a successfully thickened sauce without lumps!

Frozen yogurt breakfast sundae
Ingredients
For the fruit compote
- 150 g frozen berries
- 1/2 cup water
- 1 tsp cornflour ((heaped))
- 2 dsp maple syrup
For the sundae
- 1 cup granola
- 500 ml yoomoo frozen yogurt
- 1 cup fresh berries to garnish ( if available. )
Instructions
To make the fruit compote
- Allow berries to defrost
- Add the water, gently simmer, take out one dsp juice, mix into the cornflour, return to the pan. NEVER add cornflour directly to a recipe – you must make a thin paste first.
- Simmer for a minute until thickend.
- Add maple syrup to taste.
To make sundaes
- Spoon the fruit compote into the bottom of four tall sundae glasses
- Add about half the granola to the four glasses.
- Add two scoops of frozen yogurt to each glass.
- Top with the rest of the granola, and garnish with fresh berries.

Breakfast for me is usually grabbing something in a hurry and trying to find the time to eat it somewhere along the way. But Sunday’s are the day I do take time to enjoy and relax.
