Overnight oats really hit my breakfast target. Preparing breakfast in the evening saves time in the morning and I can just grab and go. Overnight oats are endlessly variable but this tomato version is an easy way to add that all important extra veg (tomato, celery, cucumber and carrot) to your first meal of the day.
These veggie packed tomato savoury overnight oats are made by soaking in passata rather than the more traditional fruit juice, dairy or non-dairy milk, and can be easily garnished to suit all tastes and diets.
Passata is a tomato sauce made from sieved but uncooked tomatoes, and really shows the quality of the raw ingredients. To get the best results and flavours you want to use a premium passata such as Mutti; the difference between brands can be vast, and buying the best simple ingredients really does pay dividends in terms of quality and flavour.
How do I make tomato savoury overnight oats with passata?
First, as always, I find things much easier if I assemble all my ingredients.
Trim the celery. With a power blender (if you have one), or using a stick blender, blend the passata with celery and cucumber. If using a stick blender, it’s best to cut the celery into small pieces.
Second, peel and grate the apple and carrot.
Third, mix oats, carrot, apple and stir in the tomato passata mixture. Leave overnight for the tomato to soak into the oats.
Fourth, in the morning drizzle with some olive oil, add a dash of balsamic vinegar and a sprig of basil; garnish to your heart’s content and enjoy!
Make this paleo friendly by substituting some of the oats with rye or buckwheat flakes before soaking overnight. The phytase in these grains has been shown to reduce the phytic acid. Or try making overnight oats with carrots and museli.

Easy! Just make sure that your garnishes are vegan. Here are a few suggestions:
- Drizzle some quality extra virgin olive oil for the peppery flavours
- Sliced pickles
- Sliced avocado
- A selection of seeds for some crunch
- Radishes, for some morning heat!
Can I make gluten free tomato savoury overnight oats?
Absolutely, yes! Just make the dish using certified gluten free oats. While oats themselves are gluten free, certified oats are grown in fields that are checked for cross contamination from other cereal plants such as wheat.
Why you should use a high quality passata in tomato savoury overnight oats
Passata is a sieved, cooked tomato sauce made from premium Italian tomatoes. As this dish isn’t cooked, it really allows the flavours of the passata to shine through, which is why it’s worth spending a bit more on a bottle from a quality brand such as Mutti – you really can taste the difference from the cheaper brands and you realise they are a false economy.
Mutti have been canning tomatoes in Italy since 1899, and their mission is “to bring the tomato to its maximum expression”. Their products use premium, non GMO Italian tomatoes, harvested at the peak of their ripeness. The passata is especially good, thick, smooth and almost creamy in texture.
I tasted the Passata and their; best selling in Italy, Polpa against other leading brands and the Mutti won hands down each time, both products were thicker, richer, deeper coloured and more intensely flavoured.
We’ve been missing out – Mutti aren’t a well-known brand here in the UK, but they’re number one in Italy for chopped tomatoes, passata and tomato puree, which has to be a sterling recommendation – do try it and I guarantee you will taste and see the difference in quality and be converted to a regular customer.

Tomato Savoury overnight oats made with Passata {Vegan, Paleo, Gluten Free}
Ingredients
- 338 ml passata ((1 bottle))
- 8 cm cucumber ((about 100g))
- 1 stick celery
- 1 apple
- 1 medium carrot
- 1 cup jumbo rolled oats
Instructions
- Trim the celery. Blend tomato passata, cucumber and celery to a smooth liquid.
- Peel and coarsely grate the apple and carrot. Stir together the oats, carrot, apple and passata mixture. Leave overnight for the oats to absorb the passata. Add water to give the consistency wanted.
- In the morning, drizzle on some olive oil, balsamic vinegar then garnish.

This current hot weather is not so great for dogs and poor old Herbert our mini wire haired dachshund is really not keen on the heat. To help him cool off we’ve been draping a damp (Mutti) tea towel over him, both at home and when we cannot avoid going on the tube, which is unbearably hot at the moment.
He was very worried when on the tube people might think he’s a mutt, so we explained to him that Mutti was premium and very high quality – just like him, and he was far happier.

Hi Helen, I can’t wait to try this recipe. If you use buckwheat, does it need to be cooked before soaking in the passata, or is it sufficient to soak the buckwheat in passata overnight?

You need buckwheat flakes, not whole – if you use the whole grains add them cooked and reduced the passata a little.
