Spicy Melted Cheese Bites with Three Dips

These melty spiced cheese bites served with your favourite dips are a quick and easy to make pre-dinner indulgence, or party snack.  Use pre-prepared cubes of spiced cheese for extra speed and convenience.

Crispy Melted Cheese Bites

I LOVE party food – bite sized morsels to tempt the appetite, served at a party to soak up the drinks.   If I could I’ve have a plate of assorted canapĂ©s several times a week for my supper such is my love for party food!

These crispy cheese bites are made by dusting cubes of Gouda in cornflour, quickly frying and then serving with some pre-prepared dips – fuss-free and so quick to fix for a pre dinner snack, or to serve at a party.

Germanto Gouda

For my melted cheesy bites I used these Gouda cubes, made by Germanto in Lithuania.

Germanto Gouda has been a popular brand on the continent for for a while, and is now available in the UK.  Germanto make their six week matured Gouda from cows milk, so it is still mild, sweet and creamy but has that lovely cheesy richness and is suitable for vegetarians and is 100% natural with no artificial colours or flavours.

The Gouda comes in a handy cube form making them ideal for all sorts of uses: drop into a salad, pasta bake, frittata, or quesadillas. Germanto Gouda comes in both plain and piquent flavours. the piquent, has a good, but not over powering kick.

Handy resealable packets make these perfect for snacking. Currently Germanto Gouda is available from the ethnic chiller counter in Sainsbury’s at ÂŁ1.50 for a 100g packet.

All about melting cheese

When cooked, some cheese melt, and some like halloumi, don’t.

Those that melt have a flexible network of proteins with enough flexibility that when heated, they move and reform. Cheeses that remain intact and doesn’t melt have a rigid structure with the proteins bound together.

Gouda, although it melts to a delicious gooey stringiness, will initially hold its shape well enough for the outside of the cheese to crisp up, when helped with a light dusting of cornflour, but you do need to watch and take some care when cooking.

How do I make Spicy Crispy Cheese Bites?

Step 1 – measure out the cornflour onto a plate. You can add some extra spices or dried herbs at this stage.

Step 2 – Evenly dust each cheese cubes on all sides with cornflour.

Step 3 – Heat a frying pan over a medium heat.  Briefly fry each cube, turning frequently, until crisp.  The secret is to cook them for long enough for the outside to crisp, but for the cubes not to melt and spread. You need to watch them like a hawk, and not try and make too many at once.

Fourth – Don’t worry if they melt a little and lose their shape – simply use a pair of tongs to reshape the cheese.

Fifth – Serve with your choice of dips – we choose our green goddess dressing, kebab shop chili sauce and smooth and creamy plain tahini dressing, for a good variety of colours, flavours and textures.

Spicy Crispy Cheese Bites

A simple to make canape that's a great accompaniment to one or all of our favourite dips; green goddess sauce, tahini sauce or kebab shop chili sauce. The secret to cooking cheese in this way is to dust it in cornflour.

Ingredients

  • 100 g Gouda ((2cm cubes with paprika))
  • 1 tbsp Cornflour
  • 1 tbsp Oil ((vegetable) )

To serve

  • 2 tbsp Kebab Shop Chilli Sauce
  • 2 tbsp Tahini Dressing
  • 2 tbsp Green Goddess Dressing

Instructions

  • Measure the cornflour onto a plate. Dust each cheese cube in the cornflour.
  • Oil and warm the frying pan over a medium heat. Cook the cubes, turning frequently. If they lose their shape, push them back into form with tongs.
  • Serve with one or all of kebab shop chili sauce, tahini dressing and green goddess sauce.

    Always nice to find continental brands in the supermarkets. I know of Germanto brand, and can vouch for them being really tasty. Great idea to make these for a party, but I could see me making these just for the sake of making them (to eat them).
